It is best grown in soil that is healthy but dry. You can plant Jerusalem artichokes any time from February through April. Given enough room to grow, they will produce many fine tubers.
Plant Jerusalem artichokes in ground that has already been fertilized for an earlier crop, and set them in rows that are 2 ½ feet apart and 1 foot between the tubers. The best fertilizer to use contains potassium sulfate and superphosphate. Jerusalem artichokes can be used as soon as the tops die down in the fall. You can then lift the plants from the soil and store them in sand, if you like. However, they will be firmer and have a better flavor if you leave them in the ground and only take them up when you need them. Make sure that you do not leave any part of the plant in the ground when you lift it up.
